The analysis and research of the composition a protein-vitamins product from plant materials

According to a new report from the Food and Agriculture Organization of United Nations (FAO), there is problem shortage protein-rich foods in world due influence COVID-19 other factors. Lack protein body leads disturbances processes which involved decrease immunity. Since main deficiency associated with drop rate manufacturing products containing animal protein, it relevant use modern technologies create alternatives form plant sources. To solve this problem, we have developed product obtained cedar oilcake by grinding then processing ethyl alcohol microwave installation under vacuum for 5-10 minutes. The article presents results study chemical composition substantiates biological value protein-vitamins product. Research showed high content essential substances, 47%. analysis amino acid established presence 18 acids, nonessential conditionally acids were found an amount 43%. indicators indicate completeness balance composition. This proves contained protein-vitamin mineral capable meeting daily requirement minerals necessary human 50%. In identified water-soluble vitamins group B vitamin C. data possibility using as independent prevention protein-energy malnutrition, functional additive food production, increase their nutritional value.
